Great Lent with udc cafe
Lent is a great opportunity to discover new horizons and ideas in cooking. From March 3, each udc cafe will have a special lenten menu that will make this period not only healthy, but also delicious!
Brand chef Pavel Larionov and brand pastry chef Viktor Alexandrov have created harmonious dishes, none of which will leave you indifferent. The menu will be updated every decade so that you can enjoy new gastronomic discoveries throughout the post.
Salads: freshness and lightness
Among the salads and appetizers, everyone will find something interesting. For example, Salad with quinoa and tomatoes, Cobb salad with smoked tofu, Bruschetta with vegetables or Crispy eggplant, as well as more classic Green and Vegetable salads. For lovers of brighter flavors, there is a Salad with persimmon and avocado and tofu mousse, tomato and avocado or beetroot carpaccio, as well as the most delicate Hummus with avocado and cereal bread toasts.
Soups: warm and make you happy
When you want something warming, our soups are the perfect choice. A light tomato soup with guacamole, almond petals and charcoal croutons, as well as green lentil soup with mushrooms and dried cherries will create comfort and warmth, especially in the cooler season. The menu will also include lean Borscht with beans and a bright Pumpkin soup with pomegranate seeds.
Hot dishes: satisfying, tasty, healthy
For the main dishes, we offer options such as Cauliflower Steak with chimichurri sauce, fragrant and savory, Green buckwheat on birch juice and Crumpled potatoes with porcini mushrooms and ramiro pepper. Grilled vegetables cooked on fire, or Thai-style vegetables with rice, Bulgur in tomato sauce with kimchi, or tender lentil patties will give you vivid taste sensations. And for spaghetti lovers, pasta in a light tomato sauce with basil and the legendary Alio and olio. And, of course, crispy Sweet Potatoes and French Fries!
Desserts: great sweet treats
We also did not forget about desserts: Orange cupcakes with mango puree, Apple tart, Chia mango, Truffle and Chocolate Almond dessert — all using lean ingredients. And also our incredible cupcakes in variations without milk and eggs: Big cupcake Snickers and Mini cupcakes chocolate-coconut and banana-peanuts. Also try our hand-made marmalade using agar-agar, and don't forget to take your sweet coffee with alternative milk!
